Friday night Pregame fuel
Hummus and tortilla chips
KITCHEN ITEMS
Can opener, food processor, large pan, small - medium bowl, tongs
INGREDIENTS
1 can chickpea
2 tbsp minced garlic
Juice 1 or 2 lemons
1 tbsp tahini
3-4 tablespoons olive oil
1 cup of avocado oil (or preferred oil)
Salt and pepper to taste
1 pack of soft tortilla shells or chips
VARIATIONS
•Roasted red peppers or roasted tomatoes
• Favourite olives
Add your favourite spice (cumin, paprika, or a little chipotle powder)
Remember a little spice goes a long way
TIPS
•Blend all ingredients at least 3-5 minutes
Ingredients dry or not mixing easily? Slowly add more oil for desired consistency
• If you cannot find tahini, or do not like the taste simply leave out
Use hummus as a fun side to a veggie or meat and cheese platter
Saturday brunch
Waffles
KITCHEN ITEMS
Large bowl, waffle iron, mixing utensils, measuring cup & spoons
INGREDIENTS
2 cups all purpose flour (substitute gluten free)
2 cups coconut milk (or regular, almond)
4 tablespoons coconut oil
2 tsp baking powder
1 tsp real vanilla
pinch of salt
2-3 tablespoons coconut sugar (or preferred sugar)
YUMMY ADDITIONS
Add sliced bananas, strawberries or blueberries
Chocolate chunks or cinnamon
DIRECTIONS
Mix all ingredients and allow to sit 5 minutes
While waffle iron heats up listen to your favourite beats
Once iron is hot pour a small amount into centre of waffle iron and close lid until the iron beeps that it is ready
Repeat until you have your desired amount of waffles!
TIPS
Don’t over mix your batter
Batter should be fairly thick (porridge consistency)
If too runny, add more flour. If too thick, add more liquid
Keep waffles warm by placing in oven at 200 degrees
